Egg Muffins

~6 eggs (I use half whole eggs and half egg white)
~veggies of choice (I used mushroom, onions, peppers)
~dice turkey sausage
~a little almond milk (optional)
Mix together and pour into your muffin tin sprayed with Pam 

NOTE: fill higher than I did in my pic for full muffins. Fill to top

Skinnylicious Veggie Pizza


Ingredients 

~Whole wheat dough or flat outs (I used whole wheat tortilla because that's what I had but I had to use a fork and knife to eat)

~ bell peppers of your choice

~ portobello mushrooms

~turkey sausage or turkey pepperoni 

~low fat skim mozzarella 

~Parmesan cheese

~tomato sauce 

~ olive oil ( optional)

~ Italian spices (I used an Italian blend, oregano and basil)

~red chili flakes


I spread the tomato sauce evenly around the dough of your choice. Leave a 1/2 inch border if you want to brush it with evoo and sprinkle Italian seasoning on the border which will be your crust (I skipped this step). I seasoned the sauce with spices and the topped with about a 1/2 cup skim mozzarella and parm chz. I had sautéed my veggies, turkey sausage and shrooms before hand so the were soft but you can all stir them in a light coating of evoo and season with a dash of salt and pepper and that will help them be softer during baking process. Spread veggies, shrooms and turkey sausage evenly on pizza. Add some chili flakes. I baked on 350 till the cheese was melted. Fresh dough you can cook on 500 till cheese is melted. Yum!!!!
